Today’s photography prompt was inspiring. I refilled my glass gingerbread man with syrup and I made some healthy gingerbread with freshly grated ginger and toasted hazelnut flour (instead of almond). I’m so glad I tried it, because Gingerbread People are delicious.

Lift it up
Hold it up to
a light source
a reflection of changes
my broken parts
may slide
when the waters arrive
to challenge
the edges of this
lift the corner
see our wild beasts
absorbed in fascination
to elucidate
reject the sameness of life
takes on a different meaning
find a beautiful haven
some way for mutuality
and interaction
like a string of horses
splashing ahead
in terms of connection
I have so much ground

  2. Thank you for sharing the recipe. It was the “freshly grated ginger” and “toasted” hazlenut flour that initially caught my eye. If you care to share how much/how you did this I would love to know! I enjoy cooking but baking has not been my forte and I’ve understood that exact measurements are required for baked goods to come out the best. 🙂

    • I don’t mind sharing at all. I had a gingerbread person for breakfast and it was still delicious. So I had a batch of toasted hazelnuts and since I didn’t have almond flour, I put my hazelnuts in the coffee grinder and ground them into flour. I had exactly one cup, so I made half the recipe. But I forgot while I was grating the fresh ginger, so I put in a full heaping teaspoon of grated ginger. Then I put half amounts of the rest of the ingredients with them in a bowl and stirred them together. But everything mixed wasn’t very doughy, so I started adding soy protein powder (since I don’t have any flour) a small scoop at a time until it became doughy (I think I added about a scoop and a half). Then I chilled it in the fridge for about an hour. I added more soy powder as I shaped the dough because it was a bit sticky. I shaped the little people by hand on waxed paper on a cookie sheet and cooked them at 250 F for 35 minutes. I hope yours turn out just as yummy. Good Luck! And Happy Baking.
